Pretzels
Ingredients
- 1 Cup spring water, room temperature
- 2 teaspoon Kosher salt
- 3 teaspoon brown sugar
- 3 ¼ cups all purpose flour
- 2 ¼ teaspoon yeast
For Later:
- 2 Cup water
- 2 Tablespoon baking soda (box, not can)
- Coarse salt for topping
Instructions:
- Combine and knead:
- 1 Cup water
- 2 teaspoon kosher salt
- 3 teaspoon brown sugar
- 3 ¼ Cup flour
- 2 ¼ teaspoon instant yeast
- place dough in a greased pan to proof. Cover and proof for 1 hour 15 minutes
- punch down dough, form into the pretzel shapes you desire and place on pan to raise.
- Preheat oven to 425°
- Fill a large pan with water and get it boiling while doing the next step -- Just water, no soda.
- cover pretzels and let raise for 30 minutes in a warm, breeze-free area

Preparing the bath - Pretzels get a bath in soda water to give them their signature taste and color.
- Use a bowl or pan bigger than your largest pretzel. Add the 2 Cup water, combine the 2 Tablespoon baking soda. Set aside. This is for the final step.
For each pretzel:
- place in boiling water. Wait 90 seconds.
- flip pretzel over. Wait 90 seconds.
- Place pretzel on cookie cooling rack to dry/cool
- Once cool enough to handle, place boiled pretzel into the water and soda mix and ensure it gets good coverage on both sides.
- Sprinkle with coarse salt or other toppings
- Place on parchment lined sheets for baking
- Bake pretzels at 425°F for 15-20 minutes.
